Gently cooked, peeled tomatoes with incredible flavour
Tomato Pelati are made from tomatoes harvested from a farm in the the hills of Molise. Handpicked so that only the best and perfectly ripe fruits are chosen they are a low yield tomato due to the hilliness of the region and the fact that the growing and harvesting is all still a very manual process. No acres of plastic polytunnels here! No chemical fertilizers are used and no irrigation – simply the soil, sun and hard work of the farmers who tend them.
The tomatoes are peeled individual and without the use of any mechanical process so as not to compromise their texture and to maintain their firmness. Cooked by thermic steam which helps maintain the organoleptic qualities of the tomato and their intense red colour.
They are so delicious and versatile that they can be used by simply dicing them and adding to fresh pasta (for a lovely summer dish). Alternatively, they can be warmed lightly, before pouring onto pasta with a good drizzle of extra virgin olive oil and some parmigiano to finish. They are the best for a homemade ragu or for baked fish. The taste is fresh and immediate and a world away from any tinned tomato!
